- Siapkan Bahan: – ayak tepung almond dan gula halus dgn ayakan tepung, krn adonan hrs seperti cake. Bila masih banyak granule yg tdk tersaring, Blender pakai dry mill..
- Siapkan Cetakan Macaroon atau buat Mall dengan membuat Bulatan di kertas putih dengan bantuan ballpoint/spidol dan taruh Mall dibawah Parchment paper untuk membuat ukuran Macaroon yg seragam.
- Campur Tepung Almond, gula halus dan Coklat plus kopi – ayak, bila msh ada granule, Blender hgg halus.
- Mixer putih telur hingga berbusa (tambahkan COT/Jeruk nipis bila perlu)- masukkan gula pasir 1/3 bagian bertahap- Gunakan Putih Telur suhu ruang, dan kocok hingga stiff peak, Puncak Penuh, bila diangkat- kokoh, tambahkan Cream of Tartar/ jeruk nipis bila Suka- sy skipp.
- Kocok hingga stiff peak – sy sekitar 5 mnt persis dr oermulaan.
- Masukkan campuran gula tepung almond 1/3 bertahap,.
- Fold Balik dgn spatula hingga rata.
- Bila adonan di jatuhkan dr atas, mengalir seperti Cake – Adona sy bagi 2- taruh 1/2 bagian di Piping Bag – nanti akan sy isi dengan Tiramisu Cream Cheese.
- 1/2 bag lagi sy beri Pewarna Merah Tua kupu kupu.
- Taruh di Piping Bag siaihkan.
- Spuit pada Silpat Cetakan Macaroon.
- Atau diatas Pearchment yg sibawahnya diberi tanda bulatan – dan tarik setelah selesai.
- Behind the Scene – Spuit bulat sy missing, akhirnya cuma pakai Piping Digunting😁😊💪.
- Tap berkali kali agar udara keluar hingga nanti mulus jadinya. Diamkan selama 60 menit hingga permukaan adonan kering dan tdk nempel saat disentuh.
- Cream Cheese Filling : Mixer semua Bahan – taruh di Piping bag, maaukka lemari es hingga digunakan.
- Tiramisu Filling : sisa sebagian Cream Cheese filling, Mascarpone dan tambahkan Cream Cheese 50 gram, gula halus 25 gm, 1 sdt Coklat Bubuk, 1/2 sdt Coffee instant- Mixer hingga fluffy-.
- Perhatikan Panas Oven. Batch 1 sy sebagian pecah, ke 2-3 mulus. Panaskan Oven dii suhu 140-150 selama 10 mnt sebelum Baked – Oanggang selama 15 menit dlm suhu 140-150, putar posisi di setengah waktu.
- Tidak perlu Cetakan khusus Macaroons, Punya sy justru yg konsisten hasilnya crispy diluar, gooey di dalam adlh yg pakai Parchment Paper. – tunggu hingga dingin dan lepaskan dgn di goyang” dilu…
- Setelah Dingin, Pairing masing” sesuai ukuran.
- Siapkan Filling nya.
- Isi Red Velvet dengan Cream Cheese Filling.
- Isi Tiramisu Macaroon dengan Tiramisu Filling.
