  2. Siapkan Cetakan Macaroon atau buat Mall dengan membuat Bulatan di kertas putih dengan bantuan ballpoint/spidol dan taruh Mall dibawah Parchment paper untuk membuat ukuran Macaroon yg seragam.
  3. Campur Tepung Almond, gula halus dan Coklat plus kopi – ayak, bila msh ada granule, Blender hgg halus.
  4. Mixer putih telur hingga berbusa (tambahkan COT/Jeruk nipis bila perlu)- masukkan gula pasir 1/3 bagian bertahap- Gunakan Putih Telur suhu ruang, dan kocok hingga stiff peak, Puncak Penuh, bila diangkat- kokoh, tambahkan Cream of Tartar/ jeruk nipis bila Suka- sy skipp.
  5. Kocok hingga stiff peak – sy sekitar 5 mnt persis dr oermulaan.
  6. Masukkan campuran gula tepung almond 1/3 bertahap,.
  7. Fold Balik dgn spatula hingga rata.
  8. Bila adonan di jatuhkan dr atas, mengalir seperti Cake – Adona sy bagi 2- taruh 1/2 bagian di Piping Bag – nanti akan sy isi dengan Tiramisu Cream Cheese.
  9. 1/2 bag lagi sy beri Pewarna Merah Tua kupu kupu.
  10. Taruh di Piping Bag siaihkan.
  11. Spuit pada Silpat Cetakan Macaroon.
  12. Atau diatas Pearchment yg sibawahnya diberi tanda bulatan – dan tarik setelah selesai.

  17. Perhatikan Panas Oven. Batch 1 sy sebagian pecah, ke 2-3 mulus. Panaskan Oven dii suhu 140-150 selama 10 mnt sebelum Baked – Oanggang selama 15 menit dlm suhu 140-150, putar posisi di setengah waktu.
  18. Tidak perlu Cetakan khusus Macaroons, Punya sy justru yg konsisten hasilnya crispy diluar, gooey di dalam adlh yg pakai Parchment Paper. – tunggu hingga dingin dan lepaskan dgn di goyang” dilu…
  19. Setelah Dingin, Pairing masing” sesuai ukuran.
  20. Siapkan Filling nya.
  21. Isi Red Velvet dengan Cream Cheese Filling.
  22. Isi Tiramisu Macaroon dengan Tiramisu Filling.
